Rich Collagen Chicken Bone Broth

A nutrient-dense, savory broth made from chicken bones and cartilage, simmered slowly to extract maximum collagen and flavor.

Ingredients

  • 2 lbs chicken bones and cartilage
  • 12 cups water
  • 2 tbsp apple cider vinegar
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, halved
  • 4 garlic cloves, smashed
  • 1 tsp black peppercorns
  • to taste salt

Steps

  1. Place the chicken bones and cartilage into a large stockpot or slow cooker.
  2. Add the water and apple cider vinegar. Let the mixture sit for 30 minutes to help the vinegar extract minerals and collagen from the bones.
  3. Add the carrots, celery, onion, garlic, and peppercorns to the pot.
  4. Bring the liquid to a boil over medium-high heat, then immediately reduce to a very low simmer.
  5. Cover and simmer for at least 12 to 24 hours. If using a slow cooker, set it to low for the same duration. Periodically skim off any foam that rises to the surface.
  6. Turn off the heat and let the broth cool slightly. Strain through a fine-mesh sieve into a large bowl or jars, discarding the solids.
  7. Season with salt to taste. Allow to cool completely before refrigerating. The broth should have a jelly-like consistency when cold, indicating high collagen content.
