Rich Collagen Chicken Bone Broth

A nutrient-dense, savory broth made from chicken bones and cartilage, simmered slowly to extract maximum collagen and flavor.
Ingredients
- 2 lbs chicken bones and cartilage
- 12 cups water
- 2 tbsp apple cider vinegar
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, halved
- 4 garlic cloves, smashed
- 1 tsp black peppercorns
- to taste salt
Steps
- Place the chicken bones and cartilage into a large stockpot or slow cooker.
- Add the water and apple cider vinegar. Let the mixture sit for 30 minutes to help the vinegar extract minerals and collagen from the bones.
- Add the carrots, celery, onion, garlic, and peppercorns to the pot.
- Bring the liquid to a boil over medium-high heat, then immediately reduce to a very low simmer.
- Cover and simmer for at least 12 to 24 hours. If using a slow cooker, set it to low for the same duration. Periodically skim off any foam that rises to the surface.
- Turn off the heat and let the broth cool slightly. Strain through a fine-mesh sieve into a large bowl or jars, discarding the solids.
- Season with salt to taste. Allow to cool completely before refrigerating. The broth should have a jelly-like consistency when cold, indicating high collagen content.
