Soboro Don (Japanese Ground Chicken Bowl)

A classic Japanese comfort dish featuring seasoned ground chicken and fluffy scrambled eggs served over a bed of steamed rice.

Ingredients

  • 1 lb ground chicken
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sugar
  • 1 tsp grated ginger
  • 3 large eggs
  • 1 tsp vegetable oil
  • 3 cups cooked white rice
  • 1/4 cup frozen peas or sliced scallions

Steps

  1. In a medium skillet, combine the ground chicken, soy sauce, mirin, sugar, and ginger while the pan is still cold.
  2. Turn the heat to medium. Use 4 chopsticks or a whisk to stir the chicken constantly, breaking it into very fine crumbles as it cooks.
  3. Continue cooking until the liquid has almost entirely evaporated and the chicken is fully cooked and seasoned. Set aside.
  4. In a small bowl, whisk the eggs with a pinch of salt and a teaspoon of sugar if desired.
  5. Heat oil in a separate small non-stick skillet over medium-low heat. Pour in the eggs and stir rapidly with chopsticks to create fine, small yellow curds.
  6. To serve, fill bowls with warm rice. Arrange the chicken crumbles on one side and the egg crumbles on the other side.
  7. Garnish the center with cooked green peas or sliced scallions for a pop of color.
