Simple Grilled Zucchini with Olive Oil and Herbs

A fresh and healthy side dish featuring tender zucchini slices grilled to perfection with olive oil and a hint of garlic.

Ingredients

  • 2 medium zucchini
  • 2 tbsp olive oil
  • 0.5 tsp garlic powder
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp dried oregano

Steps

  1. Preheat your grill to medium-high heat.
  2. Slice the zucchini into 1/2-inch thick rounds or long planks.
  3. In a large bowl, toss the zucchini slices with olive oil, garlic powder, salt, pepper, and oregano until evenly coated.
  4. Place the zucchini slices directly on the grill grates.
  5. Grill for 3-4 minutes per side, or until tender and charred with grill marks.
  6. Remove from the grill and serve warm.
