By James Rotanson

Chinese · Dinner · Easy · 20 min · 8 ingredients

A light, nutritious, and easy-to-digest dish featuring tender fish infused with aromatic ginger and scallions, perfect for postpartum recovery.

Ingredients

  • 1 lb sea bass fillet
  • 2 inch piece ginger, julienned
  • 3 stalks scallions, shredded
  • 2 tbsp light soy sauce
  • 1 tsp sesame oil
  • 1 tbsp Shaoxing wine
  • 1 pinch white pepper
  • 1 tbsp neutral cooking oil

Steps

  1. Rinse the sea bass fillet and pat dry with paper towels. Place the fish on a heatproof plate that fits inside your steamer.
  2. Rub the fish with white pepper and Shaoxing wine. Scatter half of the julienned ginger over the top.
  3. Set up a steamer over boiling water. Place the plate inside, cover, and steam over high heat for 8-10 minutes until the fish is opaque and flakes easily.
  4. Carefully remove the plate from the steamer. Drain off any excess liquid from the plate and discard the cooked ginger pieces.
  5. Top the steamed fish with the remaining fresh ginger and the shredded scallions. Drizzle the soy sauce and sesame oil over the fish.
  6. In a small saucepan, heat the cooking oil until it just begins to smoke. Carefully pour the hot oil over the scallions and ginger to sizzle and release their fragrance.
