Tuna Mayo Puff Pastry Parcels

Crispy, golden puff pastry squares filled with a savory and creamy tuna mayonnaise mixture, perfect for a quick lunch or snack.
Ingredients
- 1 sheet puff pastry sheet, thawed
- 5 oz canned tuna, drained
- 3 tbsp mayonnaise
- 2 tbsp red onion, finely diced
- 1 tsp lemon juice
- 1/2 tsp dried parsley
- to taste salt and pepper
- 1 large egg, beaten
Steps
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium bowl, flake the drained tuna with a fork and mix in the mayonnaise, red onion, lemon juice, parsley, salt, and pepper until well combined.
- Unroll the thawed puff pastry on a lightly floured surface and cut it into 4 equal squares.
- Place a generous spoonful of the tuna mixture into the center of each square, leaving enough room at the edges to seal.
- Fold the pastry over the filling to create a triangle or rectangle. Use a fork to crimp the edges together firmly to prevent the filling from leaking.
- Place the parcels on the prepared baking sheet. Brush the tops with the beaten egg wash and use a knife to cut a small slit in the top of each to allow steam to escape.
- Bake for 18-22 minutes, or until the pastry is puffed and a deep golden brown.
- Let the parcels cool on the tray for at least 5 minutes before serving, as the filling will be very hot.
