Cilok Bandung (Tapioca Balls with Peanut Sauce)

Cilok is a popular bite-size snack or street food in Indonesia and it is incredibly easy to make. Boiled tapioca dough is served with delicious savory peanut sauce.

Ingredients

  • 125 gr tapioca starch (1 cup 2 1/2 tsp (spoon and level please))
  • 125 gr all-purpose flour (1/2 cup + 7 Tbsp (spoon and level please))
  • 2 stalks scallion (green parts, finely chopped)
  • 1 tsp chicken powder
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp ground white pepper
  • 160 ml hot boiling water (5 1/2 fl oz, or use chicken broth for extra flavor)
  • 1 tsp cooking oil
  • 100 gr roasted unsalted peanuts (1/2 cup)
  • 2 cloves garlic
  • 3 chilies (or use 1 Tbsp sambal oelek or more to taste)
  • 150 ml water (5 fl oz)
  • 1 Tbsp tamarind paste
  • 2 Tbsp palm sugar (or coconut sugar, or more to taste)
  • 1 Tbsp Kecap manis
  • 1/2 tsp salt (or more to taste)
  • Your favorite chili sauce (I use sriracha chili sauce)
