Homemade Szechuan Chili Oil

A fragrant, spicy, and numbing oil infused with aromatics and Szechuan peppercorns, perfect for drizzling over noodles, dumplings, or stir-fries.

Ingredients

  • 1 cup neutral oil (vegetable or canola)
  • 0.5 cup Szechuan chili flakes (coarse)
  • 2 pieces star anise
  • 1 piece cinnamon stick
  • 1 tbsp Szechuan peppercorns
  • 0.5 tsp salt

Steps

  1. Heat oil with star anise, cinnamon, and peppercorns over low heat for 10-15 minutes until fragrant.
  2. Place chili flakes and salt in a heatproof bowl.
  3. Strain the hot oil into the bowl over the chili flakes.
  4. Let cool completely before storing in a jar.
