Classic Tabbouleh Salad

A refreshing and vibrant Middle Eastern herb salad featuring finely chopped parsley, mint, tomatoes, and nutty bulgur wheat in a zesty lemon dressing.
Ingredients
- 0.5 cup fine bulgur wheat
- 1 cup boiling water
- 3 cups fresh flat-leaf parsley
- 0.5 cup fresh mint leaves
- 3 medium firm tomatoes
- 3 green onions
- 0.25 cup extra virgin olive oil
- 3 tbsp fresh lemon juice
- 0.5 tsp salt
- 0.25 tsp black pepper
Steps
- Place the fine bulgur in a small bowl and cover with boiling water. Let it soak for 15 to 20 minutes until softened, then drain any excess water thoroughly.
- Wash the parsley and mint and pat them very dry with a kitchen towel. Finely chop the herbs by hand until they are very small pieces.
- Finely dice the tomatoes and thinly slice the green onions.
- In a large mixing bowl, combine the chopped parsley, mint, tomatoes, green onions, and the prepared bulgur wheat.
- In a small jar or bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
- Pour the dressing over the salad and toss gently to ensure everything is evenly coated.
- Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
