Abura Soba

Taking a break from my Sunday bakmi routine for an abura soba craving.
Ingredients
- Meat topping:
- 300 g pork (or chicken/beef)
- mushrooms
- 1 shallot
- 4 garlic cloves
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- ½ tbsp sweet soy sauce
- Sugar, mushroom seasoning (Totole), MSG, salt & a pinch of pepper, to taste
- Sauce base:
- 4 tbsp soy sauce
- 1 tsp vinegar
- 1 tbsp sugar
- 1 tbsp chicken or dashi powder
- 3 tbsp water
- Fragrant chili oil:
- 2 stalks scallions - finely chopped
- 4 garlic cloves - grated
- 3 tbsp chili powder
- 2 tbsp chili oil
- 1 tbsp sesame oil
- 1 tbsp toasted sesame seeds
- Ajitsuke Tamago (Ramen Egg):
- 120 ml soy sauce
- 120 ml water
- 2 tbsp mirin
- 1 tbsp sugar
- 5–6 eggs
- To assemble:
- 1 tbsp pork lard
- 1 tbsp garlic oil
- Cooked ramen noodles
- Egg yolk
- Grated garlic
- Roasted seaweed
- Scallions
Steps
- Sauté the shallot until soft, then add the garlic and cook until fragrant.
- Add the pork and cook until it’s no longer pink, then toss in the mushrooms and season everything with soy sauce, oyster sauce, sweet soy sauce, sugar, mushroom seasoning, MSG, salt, and pepper.
- Add a splash of water and let it simmer for a few minutes.
- To make the sauce base, add soy sauce, vinegar, sugar, chicken or dashi powder, and water to a small saucepan and heat until the sugar dissolves and everything is well combined.
- To make the chili oil, mix scallions, grated garlic, chili powder, chili oil, sesame oil, and toasted sesame seeds together, then pour hot oil over it and stir well.
- Boil 5–6 eggs for 6½ minutes, then transfer straight to an ice bath and peel.
- Mix the marinade ingredients (soy sauce, water, mirin, sugar), add the peeled eggs, and marinate in the fridge for 6–12 hours.
- To assemble, add 1 tbsp pork lard and 1 tbsp garlic oil to your bowl (or substitute 2 tbsp garlic oil).
- Add 2-3 tbsp of the sauce base and toss in the cooked ramen noodles.
- Top with the fragrant chili oil, egg yolk, grated garlic, meat topping, roasted seaweed, ajitsuke tamago, and scallions.
- Add an extra drizzle of chili oil on top and finish with a little sesame oil (optional).
