Roasted Lamb with Rosemary and Garlic

A classic holiday centerpiece featuring a tender leg of lamb infused with fragrant rosemary and savory garlic.
Ingredients
- 5 lbs bone-in leg of lamb
- 6 garlic cloves, minced
- 3 tbsp fresh rosemary, chopped
- 2 tbsp olive oil
- 1 tbsp salt
- 1 tsp black pepper
- 1 tbsp lemon juice
Steps
- Preheat your oven to 325°F (165°C).
- In a small bowl, combine the minced garlic, chopped rosemary, olive oil, salt, pepper, and lemon juice to form a paste.
- Use a sharp knife to make several small slits all over the surface of the lamb.
- Rub the herb paste thoroughly over the entire leg of lamb, ensuring some gets into the slits.
- Place the lamb on a roasting rack in a large pan.
- Roast in the oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F for medium-rare.
- Remove the lamb from the oven and tent loosely with foil. Let it rest for at least 15-20 minutes before carving to allow juices to redistribute.
