Roasted Lamb with Rosemary and Garlic

A classic holiday centerpiece featuring a tender leg of lamb infused with fragrant rosemary and savory garlic.

Ingredients

  • 5 lbs bone-in leg of lamb
  • 6 garlic cloves, minced
  • 3 tbsp fresh rosemary, chopped
  • 2 tbsp olive oil
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tbsp lemon juice

Steps

  1. Preheat your oven to 325°F (165°C).
  2. In a small bowl, combine the minced garlic, chopped rosemary, olive oil, salt, pepper, and lemon juice to form a paste.
  3. Use a sharp knife to make several small slits all over the surface of the lamb.
  4. Rub the herb paste thoroughly over the entire leg of lamb, ensuring some gets into the slits.
  5. Place the lamb on a roasting rack in a large pan.
  6. Roast in the oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F for medium-rare.
  7. Remove the lamb from the oven and tent loosely with foil. Let it rest for at least 15-20 minutes before carving to allow juices to redistribute.
