Miso Cabbage Stir-Fry

A quick, savory, and umami-rich stir-fry featuring crisp green cabbage coated in a flavorful miso-sesame sauce.
Ingredients
- 4 cups green cabbage, chopped into bite-sized pieces
- 1.5 tbsp miso paste (white or awase)
- 1 tsp soy sauce
- 1 tbsp mirin
- 1 tbsp sake or water
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tbsp cooking oil
- 1 tsp toasted sesame oil
- 1 tsp toasted sesame seeds
Steps
- In a small bowl, whisk together the miso paste, soy sauce, mirin, and sake (or water) until smooth to create the sauce.
- Heat the cooking oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
- Add the chopped cabbage to the pan. Stir-fry for 3-4 minutes until the cabbage begins to wilt but still retains some crispness.
- Pour the miso sauce mixture over the cabbage. Stir-fry constantly for another 1-2 minutes to ensure the cabbage is evenly coated and the sauce thickens slightly.
- Remove from heat, drizzle with toasted sesame oil, and toss well. Garnish with sesame seeds and serve hot.
