Pork Meatball Congee

A comforting and savory rice porridge featuring tender, seasoned pork meatballs and fresh aromatics.
Ingredients
- 1 cup Jasmine rice
- 8 cups Water or chicken broth
- 0.5 lb Ground pork
- 1 tbsp Fresh ginger, minced
- 1 tbsp Soy sauce
- 1 tsp Sesame oil
- 1 tsp Cornstarch
- 0.5 tsp Salt
- 0.25 tsp White pepper
- 2 stalks Green onions, sliced
Steps
- Rinse the rice thoroughly under cold water until the water runs clear.
- In a large pot, combine the rice and broth or water. Bring to a boil, then reduce heat to low and simmer, partially covered, for about 45-60 minutes.
- Stir the rice occasionally to prevent sticking and to help the grains break down into a creamy consistency.
- While the rice is simmering, mix the ground pork, minced ginger, soy sauce, sesame oil, cornstarch, salt, and white pepper in a bowl. Form into small 1-inch meatballs.
- Once the porridge has reached your desired thickness, gently drop the meatballs into the pot.
- Simmer for another 10 minutes until the meatballs are cooked through.
- Serve hot in bowls, garnished with sliced green onions and a drizzle of sesame oil.
