Pork Meatball Congee

A comforting and savory rice porridge featuring tender, seasoned pork meatballs and fresh aromatics.

Ingredients

  • 1 cup Jasmine rice
  • 8 cups Water or chicken broth
  • 0.5 lb Ground pork
  • 1 tbsp Fresh ginger, minced
  • 1 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 1 tsp Cornstarch
  • 0.5 tsp Salt
  • 0.25 tsp White pepper
  • 2 stalks Green onions, sliced

Steps

  1. Rinse the rice thoroughly under cold water until the water runs clear.
  2. In a large pot, combine the rice and broth or water. Bring to a boil, then reduce heat to low and simmer, partially covered, for about 45-60 minutes.
  3. Stir the rice occasionally to prevent sticking and to help the grains break down into a creamy consistency.
  4. While the rice is simmering, mix the ground pork, minced ginger, soy sauce, sesame oil, cornstarch, salt, and white pepper in a bowl. Form into small 1-inch meatballs.
  5. Once the porridge has reached your desired thickness, gently drop the meatballs into the pot.
  6. Simmer for another 10 minutes until the meatballs are cooked through.
  7. Serve hot in bowls, garnished with sliced green onions and a drizzle of sesame oil.
