Ingredients
- 2 cups macaroni pasta
- 2 cups shredded cheddar cheese (or a blend of cheeses)
- 2 cups milk
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground mustard (optional)
- 1/4 teaspoon paprika (for garnish)
- Breadcrumbs (for topping, optional)
Steps
- Bring a large pot of salted water to a boil. Add the macaroni pasta and cook according to the package instructions until al dente. Drain and set aside.
- In a medium saucepan, melt the butter over medium heat.
- Add the flour to the melted butter and whisk constantly to create a roux. Cook the roux for about 2 minutes, ensuring it doesn't brown.
- Gradually whisk in the milk, and continue to cook while whisking, until the mixture thickens and becomes smooth.
- Add the shredded cheddar cheese to the sauce and stir until the cheese is melted and the sauce is creamy.
- Season the cheese sauce with salt, black pepper, and ground mustard (if using).
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked macaroni pasta and the cheese sauce. Gently fold the pasta to coat it evenly with the sauce.
- If using breadcrumbs for a crispy topping, sprinkle a thin layer over the macaroni and cheese.
- Transfer the macaroni and cheese mixture to a baking dish.
- Sprinkle paprika over the top for color and flavor.
- Bake the macaroni and cheese in the preheated oven for about 20-25 minutes, or until the top is golden brown and the sauce is bubbly.
- Remove from the oven and let it cool slightly before serving.
