Strawberry Overnight Oats (Blended)

Quick and creamy strawberry overnight oats with a cheesecake flavor and optional chocolate topping. Ready in 10 minutes and perfect for meal prep!

Ingredients

  • 2 cups rolled oats (approx. 240g)
  • ½ cup milk of choice (approx. 125ml)
  • 1 cup frozen strawberries (approx. 150g)
  • 1 cup thick Greek-style or non-dairy yogurt (approx. 250g; I use soy)
  • 2 tsp vanilla extract (approx. 8g)
  • 1-2 tsp maple syrup (optional; approx. 10g, to taste)
  • ⅛ tsp salt (approx. 0.75g)
  • 80 g plant-based white chocolate (melted)
  • ½ tbsp coconut oil (optional; helps thin the chocolate)
  • 1 ½ cups fresh strawberries (hulled and quartered (approx. 250g))

Steps

  1. Add rolled oats, milk, frozen strawberries, yogurt, vanilla, maple syrup (if using), and salt to a blender. Blend until smooth and creamy, like pancake batter.
  2. Divide the chopped fresh strawberries between 4 jars or containers. Pour the blended oat mixture over the top and gently smooth the surface.
  3. If using, stir the melted coconut oil into the white chocolate until combined. Pour over the oats to create a thin shell.
  4. Cover and refrigerate for at least 1 hour 30 minutes, or overnight, until set. Enjoy cold, straight from the fridge.
