Spaghetti Aglio e Olio

A classic Italian pasta dish featuring garlic, olive oil, and chili flakes for a simple yet flavorful meal.

Ingredients

  • 1 lb spaghetti
  • 0.5 cup extra virgin olive oil
  • 6 garlic cloves, thinly sliced
  • 0.5 tsp red pepper flakes
  • 0.25 cup fresh parsley, chopped
  • 0.25 cup parmesan cheese
  • to taste salt
  • to taste black pepper

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package directions until al dente.
  2. While the pasta cooks, combine olive oil and sliced garlic in a large skillet over medium-low heat.
  3. Sauté the garlic until it turns golden brown, being careful not to burn it.
  4. Stir in the red pepper flakes and cook for 30 seconds.
  5. Reserve about 1/2 cup of the pasta cooking water, then drain the pasta.
  6. Add the cooked pasta and the reserved cooking water to the skillet with the garlic oil.
  7. Toss well to coat the pasta evenly, then stir in the fresh parsley.
  8. Season with salt and pepper to taste and serve immediately.
