Winter Melon Soup with Pork Ribs

A light, comforting, and cooling traditional Chinese soup made with tender winter melon and savory pork ribs.
Ingredients
- 500 g pork ribs
- 600 g winter melon, peeled and cubed
- 3 ginger slices
- 4 dried scallops
- 6 cups water
- to taste salt
- 1 stalk green onions, chopped
Steps
- Blanch the pork ribs in a pot of boiling water for about 5 minutes to remove impurities, then drain and rinse under cold water.
- In a clean large pot, add the blanched ribs, ginger slices, dried scallops, and water.
- Bring the pot to a boil, then reduce the heat to low and simmer with a lid on for 45 minutes.
- Add the winter melon cubes to the pot and continue to simmer for another 20 to 25 minutes until the melon becomes translucent and tender.
- Season the soup with salt to your preference and garnish with fresh green onions before serving hot.
