Red Date and Goji Berry Chicken Soup

A traditional Chinese nourishing soup often served during postpartum recovery to replenish blood and boost energy.

Ingredients

  • 1.5 lb chicken thighs or whole chicken pieces
  • 10 pieces dried red dates (jujubes)
  • 2 tbsp dried goji berries
  • 1 inch piece fresh ginger, sliced
  • 6 cups water
  • to taste salt

Steps

  1. Blanch the chicken pieces in a pot of boiling water for 5 minutes to remove impurities. Drain and rinse the chicken under cold running water.
  2. Rinse the red dates and goji berries. If the red dates have pits, you can slice them to remove the pits for better flavor extraction.
  3. In a large clean soup pot, add the blanched chicken, red dates, ginger slices, and 6 cups of water.
  4. Bring the pot to a boil over high heat, then reduce to low heat. Cover and simmer gently for 1 to 1.5 hours.
  5. Add the goji berries during the last 10 minutes of simmering to preserve their texture and nutrients.
  6. Season with salt to taste and serve the soup hot.
