Classic Easy Fried Rice

A quick and savory staple that is perfect for using up leftover chilled rice and vegetables.
Ingredients
- 3 cups cooked white rice (chilled)
- 2 tbsp vegetable oil
- 0.5 small onion, finely diced
- 0.5 cup frozen peas and carrots
- 2 cloves garlic, minced
- 2 large eggs, lightly beaten
- 3 tbsp soy sauce
- 1 tsp toasted sesame oil
- 2 stalks green onions, sliced
Steps
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the onion and frozen peas and carrots, sautéing until the onion is translucent and vegetables are tender, about 3-5 minutes.
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- Push the vegetable mixture to the sides of the pan and pour the beaten eggs into the center. Scramble until just set, then mix with the vegetables.
- Add the chilled rice to the pan, breaking up any large clumps with a spatula.
- Pour the soy sauce and sesame oil over the rice. Stir-fry for 2-3 minutes, ensuring the rice is evenly coated and heated through.
- Toss in the sliced green onions, remove from heat, and serve immediately.
