Creamy Celery and Potato Soup

A comforting and silky smooth soup that perfectly balances the earthy flavor of celery with the heartiness of potatoes.

Ingredients

  • 4 celery stalks, chopped
  • 2 large potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 0.5 cup heavy cream
  • 2 tbsp butter
  • 1 tsp salt
  • 0.5 tsp black pepper
  • fresh parsley for garnish

Steps

  1. Melt the butter in a large pot over medium heat. Add the onion, celery, and garlic, and sauté until the vegetables are softened, about 8 minutes.
  2. Add the cubed potatoes and vegetable broth to the pot. Bring the mixture to a boil.
  3. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the potatoes are very tender.
  4. Use an immersion blender to blend the soup until it is completely smooth. Alternatively, transfer to a blender in batches.
  5. Stir in the heavy cream and season with salt and black pepper. Heat through for another 2-3 minutes.
  6. Ladle into bowls and garnish with fresh parsley if desired.
