Creamy Celery and Potato Soup

A comforting and silky smooth soup that perfectly balances the earthy flavor of celery with the heartiness of potatoes.
Ingredients
- 4 celery stalks, chopped
- 2 large potatoes, peeled and cubed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 0.5 cup heavy cream
- 2 tbsp butter
- 1 tsp salt
- 0.5 tsp black pepper
- fresh parsley for garnish
Steps
- Melt the butter in a large pot over medium heat. Add the onion, celery, and garlic, and sauté until the vegetables are softened, about 8 minutes.
- Add the cubed potatoes and vegetable broth to the pot. Bring the mixture to a boil.
- Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the potatoes are very tender.
- Use an immersion blender to blend the soup until it is completely smooth. Alternatively, transfer to a blender in batches.
- Stir in the heavy cream and season with salt and black pepper. Heat through for another 2-3 minutes.
- Ladle into bowls and garnish with fresh parsley if desired.
