Buffalo Chicken Wings

Perfectly crispy oven-baked wings tossed in a spicy, buttery buffalo sauce, offering a healthier alternative to deep frying without sacrificing crunch.
Ingredients
- 2 lbs chicken wings
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup buffalo sauce
- 2 tbsp unsalted butter
Steps
- Preheat your oven to 425°F (220°C). Line a large baking sheet with aluminum foil and place a wire cooling rack on top.
- Pat the chicken wings thoroughly dry with paper towels. This is the most important step for achieving maximum crispiness.
- In a large bowl, toss the wings with baking powder, salt, and pepper until they are evenly coated.
- Arrange the wings in a single layer on the wire rack, ensuring they are not touching each other.
- Bake for 45 to 50 minutes, flipping the wings halfway through, until they are golden brown and the skin is very crispy.
- While the wings bake, melt the butter and whisk it together with the buffalo sauce in a large clean bowl.
- Once the wings are done, remove them from the oven and immediately toss them in the buffalo sauce mixture until well coated.
- Serve hot with celery sticks and blue cheese or ranch dressing on the side.
