Shish Tawook with Garlic Sauce (Toum)

Classic Lebanese grilled chicken skewers marinated in a citrusy yogurt blend, served with a traditional fluffy garlic sauce.

Ingredients

  • 2 lbs chicken breast, cubed
  • 1/2 cup plain yogurt
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 6 garlic cloves, minced
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp ground cinnamon
  • 1 cup garlic cloves for sauce
  • 2 cups neutral oil for sauce
  • 1 tsp salt

Steps

  1. In a large bowl, whisk together yogurt, lemon juice, olive oil, minced garlic, tomato paste, paprika, oregano, cinnamon, and salt.
  2. Add the chicken cubes to the marinade, coat well, and refrigerate for at least 4 hours or overnight.
  3. To make the garlic sauce (Toum), pulse the garlic and salt in a food processor until finely minced.
  4. With the processor running, very slowly drizzle in the neutral oil in a thin stream, alternating with small splashes of lemon juice until a fluffy, white emulsion forms.
  5. Thread the marinated chicken onto skewers and grill over medium-high heat for 10-12 minutes, turning occasionally until charred and cooked through.
  6. Serve the skewers hot with a generous side of the garlic sauce and pita bread.
