Shish Tawook with Garlic Sauce (Toum)

Classic Lebanese grilled chicken skewers marinated in a citrusy yogurt blend, served with a traditional fluffy garlic sauce.
Ingredients
- 2 lbs chicken breast, cubed
- 1/2 cup plain yogurt
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 6 garlic cloves, minced
- 1 tbsp tomato paste
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp ground cinnamon
- 1 cup garlic cloves for sauce
- 2 cups neutral oil for sauce
- 1 tsp salt
Steps
- In a large bowl, whisk together yogurt, lemon juice, olive oil, minced garlic, tomato paste, paprika, oregano, cinnamon, and salt.
- Add the chicken cubes to the marinade, coat well, and refrigerate for at least 4 hours or overnight.
- To make the garlic sauce (Toum), pulse the garlic and salt in a food processor until finely minced.
- With the processor running, very slowly drizzle in the neutral oil in a thin stream, alternating with small splashes of lemon juice until a fluffy, white emulsion forms.
- Thread the marinated chicken onto skewers and grill over medium-high heat for 10-12 minutes, turning occasionally until charred and cooked through.
- Serve the skewers hot with a generous side of the garlic sauce and pita bread.
