Deviled Eggs with Chives

A classic, creamy appetizer featuring hard-boiled eggs filled with a savory yolk mixture and topped with fresh, snappy chives.
Ingredients
- 6 large eggs
- 1/4 cup mayonnaise
- 1 tsp Dijon mustard
- 1 tsp apple cider vinegar
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh chives, finely chopped
- 1/8 tsp paprika
Steps
- Place eggs in a single layer in a saucepan and cover with at least one inch of water. Bring to a rolling boil.
- Turn off the heat, cover the pan, and let the eggs sit for 12 minutes.
- Transfer eggs to a bowl of ice water for 5 minutes to stop the cooking process.
- Peel the eggs carefully and slice them in half lengthwise. Remove the yolks and place them in a small mixing bowl.
- Mash the yolks with a fork until smooth. Add mayonnaise, mustard, vinegar, salt, and pepper, stirring until creamy.
- Fold in half of the chopped chives into the yolk mixture.
- Spoon or pipe the mixture back into the egg white halves.
- Garnish with the remaining chives and a light dusting of paprika before serving.
