Deviled Eggs with Chives

A classic, creamy appetizer featuring hard-boiled eggs filled with a savory yolk mixture and topped with fresh, snappy chives.

Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh chives, finely chopped
  • 1/8 tsp paprika

Steps

  1. Place eggs in a single layer in a saucepan and cover with at least one inch of water. Bring to a rolling boil.
  2. Turn off the heat, cover the pan, and let the eggs sit for 12 minutes.
  3. Transfer eggs to a bowl of ice water for 5 minutes to stop the cooking process.
  4. Peel the eggs carefully and slice them in half lengthwise. Remove the yolks and place them in a small mixing bowl.
  5. Mash the yolks with a fork until smooth. Add mayonnaise, mustard, vinegar, salt, and pepper, stirring until creamy.
  6. Fold in half of the chopped chives into the yolk mixture.
  7. Spoon or pipe the mixture back into the egg white halves.
  8. Garnish with the remaining chives and a light dusting of paprika before serving.
