Daikon Mochi (Japanese Radish Cakes)

Crispy on the outside, chewy on the inside pan-fried savory cakes made with grated daikon radish and a sweet-savory soy glaze.

Ingredients

  • 300 g Daikon radish (peeled and grated)
  • 4 tbsp Potato starch (Katakuriko)
  • 2 tbsp All-purpose flour
  • 2 tbsp Green onions (finely chopped)
  • 1 tsp Soy sauce (for batter)
  • 1 tbsp Sesame oil (for frying)
  • 1 tbsp Soy sauce (for glaze)
  • 1 tbsp Mirin (for glaze)
  • 1/2 tbsp Sugar (for glaze)

Steps

  1. Grate the daikon radish and squeeze out excess moisture, leaving it slightly damp.
  2. In a bowl, mix the grated daikon, potato starch, flour, green onions, and soy sauce to form a dough.
  3. Shape the mixture into flat round patties.
  4. Heat sesame oil in a pan and fry the patties for 3-4 minutes on each side until golden brown.
  5. Combine the glaze ingredients, pour into the pan, and coat the patties until the sauce thickens.
