Stir-fried Pork with Ginger and Sesame Oil

A classic warming dish often served for postpartum recovery, featuring tender pork and plenty of ginger to help improve circulation and energy.
Ingredients
- 10 oz pork tenderloin, thinly sliced
- 3 inch piece fresh ginger, julienned
- 2 tbsp pure sesame oil
- 1 tbsp light soy sauce
- 1 tbsp Shaoxing wine or dry sherry
- 1 tsp cornstarch
- 0.5 tsp sugar
- 1 pinch white pepper
- 2 tbsp water or chicken stock
Steps
- In a medium bowl, combine the sliced pork with soy sauce, Shaoxing wine, white pepper, and cornstarch. Let it marinate for 15 minutes.
- Heat the sesame oil in a wok or large skillet over medium heat. Do not let the oil smoke, as sesame oil has a lower smoke point.
- Add the julienned ginger to the pan and sauté for 2-3 minutes until it becomes aromatic and slightly golden.
- Increase the heat to medium-high and add the marinated pork slices to the pan, spreading them out in a single layer.
- Stir-fry the pork for 3-4 minutes until it is just cooked through and no longer pink.
- Add the sugar and 2 tablespoons of water or stock to create a light sauce. Stir-fry for another minute to coat everything evenly.
- Adjust seasoning to taste and serve immediately while hot, ideally with steamed rice.
