Chinese Pork Bone Soup

A traditional and nourishing Cantonese-style soup featuring tender pork bones, earthy lotus root, and sweet red dates.
Ingredients
- 500 g pork neck bones or ribs
- 300 g lotus root, peeled and sliced
- 200 g daikon radish, peeled and cubed
- 3 slices fresh ginger
- 5 pieces dried red dates
- 1 tbsp goji berries
- 2 liters water
- to taste salt
Steps
- Place pork bones in a pot of cold water, bring to a boil, and blanch for 5 minutes to remove impurities. Drain and rinse the bones thoroughly.
- In a large clean soup pot or Dutch oven, combine the blanched pork bones, ginger slices, red dates, and 2 liters of water.
- Bring the pot to a boil, then reduce the heat to low. Cover and simmer gently for 60 minutes.
- Add the sliced lotus root and cubed daikon radish to the pot. Continue to simmer for another 45 to 60 minutes until the vegetables are tender and the meat is falling off the bone.
- Stir in the goji berries and season with salt to taste. Simmer for a final 5 minutes.
- Ladle into bowls and serve hot as a comforting starter or main dish.
