Simple Hainan Chicken Rice

A simplified version of the classic Southeast Asian dish using juicy chicken marylands for maximum flavor and tender rice cooked in chicken broth.
Ingredients
- 2 pieces chicken marylands
- 1.5 cups jasmine rice
- 3 cups chicken stock or water
- 2 inch piece ginger
- 4 cloves garlic
- 1 tbsp sesame oil
- 1 tsp salt
- 2 tbsp light soy sauce
- 0.5 sliced cucumber
Steps
- Rub the chicken marylands with salt to clean the skin, then rinse under cold water.
- In a large pot, bring the chicken stock, half of the sliced ginger, and 2 smashed garlic cloves to a boil.
- Submerge the chicken in the boiling liquid, reduce heat to low, and simmer for 20 minutes. Turn off the heat and let the chicken sit in the hot liquid for another 10 minutes.
- Remove the chicken and immediately plunge it into an ice bath for 5 minutes to keep the skin springy. Reserve the cooking liquid.
- In a pan or rice cooker, sauté the remaining minced garlic and ginger in sesame oil until fragrant. Add the washed rice and stir to coat the grains.
- Add the appropriate amount of reserved chicken cooking liquid to the rice and cook as per your rice cooker's instructions.
- Slice the chicken marylands into bite-sized pieces and serve over the fragrant rice with soy sauce and cucumber slices.
